Recipe
Preheat the oven to 400 F (200 C). Combine all the dry ingredients and mix them well: cassava flour, coconut flakes, coconut sugar, and baking soda. Add the lemon zest, Lemon juice (I used average lemon size), coconut milk, and oil.
If you are on AIP reintro, or you don’t have an intolerance to eggs, you could use a real egg. In the AIP version let’s prepare a gelatin egg: in a separate bowl, put together gelatin ( I prefer beef gelatin) and hot water and whisk well, until the gelatin mixture becomes smooth. Add the gelatin egg to other ingredients and mix well.
Roll the dough into balls and place them evenly on baking sheets. Form from the balls cookies, using your hands or spoon.
Bake in preheated oven for 11-12 minutes. Let them cool, before you taste them.
